Simple Guacamole

 

I recently took a poll asking people what recipe they would like to see blogged ahead of Cinco De Mayo.  I was a little surprised to see guacamole be the top choice.  Not that I don’t absolutely LOVE guac, because I do (I have an avocado tattoo for christ sake)  I just didn’t realize so many people wanted a recipe for it.  But once I thought about it, simple as it might be sometimes it’s nice to just have some measurements to follow.




 

My guacamole is a lot like my body.... really chunky.  But in order to distribute the salt, garlic, and other ingredients evenly I have a method:  I mash half the avocados to a pretty smooth consistency with a fork first. 





 

Then, I stir in all the seasonings and vegetable add ins.




 

Finally, I gently fold in the other half of the avocado in cubes.  This results in a guacamole that is perfectly seasoned, bound together nicely by the first mash that creates a sauce, but full of the nice chunks of avocado that I love!







Simple Guacamole

6 medium avocados 

2 roma tomatoes, seeds removed, and small diced

1/2 cup fine diced red onion 

1/2 cup minced cilantro

 1 large clove garlic finely minced 

1 tsp salt

Juice of small lemon 

1 small jalapeno, seeded and finely diced (optional)


Scoop half of the avocados and mash with a fork.  Squeeze the seeds out of two roma tomatoes and then small dice.  Add a 1/2 cup of fine diced red onion and a half cup of minced cilantro.  Stir in the salt, lemon juice, and the finely minced garlic (I like to grate mine on a microplane) Dice the remaining three avocados and carefully fold in. This makes for a chunky guacamole.  You can mash all of them if you prefer a smoother texture.
