I love themes. Like a lot. I also love finding small ways to celebrate holidays and seasons. The small things can really go a long way in making a "regular" day feel a little more special. This beet hummus would be extra fun packed in your childs lunch as a Valentines Day surprise.
I happen to love beets but even if you don't it's ok because it doesn't taste overly "beet-y". If you're worried about it you can start with less and add it gradually to your own taste. I use canned beets for ease and because I always have them on hand for salads but of course you can also use fresh cooked.
Beets have a ton of wonderful health benefits and something approachable like hummus in a vibrant color is a good way to introduce them to your kids too. They will be loaded with folate, potassium, fiber, and magnesium before you know it. 😉
Beet Hummus
2 15oz cans Garbanzo beans, drained
1 tsp. Kosher salt
1/2 tsp. Ground cumin
Juice of 1 small lemon (or half a large)
1 1/2 tsp. Sesame oil *
1 15oz can Beets, drained **
2 cloves Garlic
2 TB. Light olive oil
1/8- 1/4c. Water (depending on how thick you prefer it)
Combine all ingredients in food processor and blend until smooth.
*I prefer to use sesame oil as I always have it on hand but you can certainly use traditional tahini. You will just have to adjust the amount and need more
**If using fresh cooked beets use one cup
