Wardrobe Wednesday- Concert Outfit

Last Thursday The Boy and I went to see our favorite band again, Anberlin (go look them up if you haven't heard of them.....they're amazing!)

The thing about concerts is that you want to look cute and stylish but you have to be practical too.  This is not the time to wear your heeled boots.  I saw a few girls that tried and were limping half way through....not cute.

So I went completely comfy



Jacket: Ross
Jeans: Ross
Boyfriend Tee: Target
Tennies: Walmart


The jacket is what I wish I could have worn....but it was only for pictures.  It was still 83 at 9pm that night so wearing it to the show would have just resulted in me carrying it around anyway.

Funny thing was the lead singer, Stephen, was wearing an almost identical outfit to mine.  Jeans, leather jacket, and similar shirt but in white.....they call it a boyfriend tee for a reason!

So I guess that means I have rockstar style ;)   


Oh and I realized that from far away my necklace sort of looks like a wiener and balls....but it's a fork and spoon crossed.  Just a little nod to what I do for a living



Happy Wardrobe Wednesday!  Can't wait to wear more Fall clothes now that it's finally starting to cool down here in AZ

DIY Halloween Cupcake Toppers- Fondant Bones and Dracula Teeth

This is a repost.   I made Monster High Cupcakes for my niece's birthday party this year but I wanted to show you some of the homemade toppers again because they work perfectly for Halloween! 

Like these bone toppers




Cute right?  And look how easy they are

Just roll out little ropes of fondant


 


Cut in the sides a little


 

And roll them inward to create your bone shape.  voila!


 

Here is a SUPER old picture that is crappity crap crap quality....because it's from like 2 phones ago...but you get the idea.  And the spiders are just cheap rings
      
 

Now for Dracula teeth.  Cut lip shapes out of red fondant.  I made a paper template so they would be somewhat close every time.  Make an indent in the middle




Attach slightly curved triangles as the fangs

 

That's it!  Everyone will love them at your Halloween gathering this year and think that it came from a professional bakery

MoMo Monday Week #23

MoMo was a stray when she showed up and claimed me as her mother.  And for a little while my mom insisted she stay outside and not be allowed in (I was 16 at the time) 

After a little time she started coming in the house and was about 50/50 indoor outdoor.  As the years went by she spent more and more time inside and hit about 80% indoors.  She would go outside to go potty, sun herself for a few minutes, then make her way back in through the doggy door. I never really worried though because she hardly ever ventured past our backyard. So while she preferred to be inside most of the time she still had the freedom to go out if she wanted.

That was until this past spring she gave us a big health scare and had to have surgery.  They said she needed to stay inside for at least 3 weeks but I decided right then and there it was time to make her indoors full time.  It was coming soon anyway and even though she never ventured too far from home I was ready to put my  mind at ease of anything ever happening to her. That very night the doggy door was covered up and a litter box was bought.  The rest is history. 

She adjusted to her new indoor life really well.  We had little to no problems with scratching or meowing.  At times though you could see her missing the outdoors and that's when she goes and hangs out in the window






And that seems to satisfy her. But the other day I decided to treat her to a little outside time....with me supervising of course.  I was going outside to spray for bugs and let her follow me around

I managed to snap this picture.  She looks so tranquil...like she's reminiscing about the old days

Low Carb Almond Butter Cookies

I don't know what the deal is lately....I'm not normally much of a sweets kinda gal.  Way before I even started living a low carb lifestyle....It just wasn't my thing.  I rarely craved or even ate sweets.  

That's why it's extra weird that recently I want sweets more than I ever have in my life.  And that's forced me to start experimenting with making my own LC versions which I'm actually having alot of fun doing.  I never thought I would get into LC baking....I thought I would leave that to my sister..but here I am!  

I've seen alot of sugar free recipes for peanut butter cookies out there...all very similar.  I tweaked it a bit and subbed almond butter.  Here's what I came up with


Low Carb Almond Butter Cookies 

1 cup Almond butter (I used crunchy)
1 cup Stevia (or sweetener of choice)
1 Egg
2 tsp. Vanilla
1/4 tsp. Salt
2 TB. Coconut flour

Blend all ingredients together in mixer.  Form into walnut sized balls and place on a parchment lined baking sheet. Use a fork to flatten the balls in a criss cross pattern.  Bake at 350 for 9 minutes  Yield 12 cookies




They aren't super sweet....but I like that.  you could add more sweetener if you like.  But they come out nice and chewy....just how I like my cookies.

Wardrobe Wednesday - Red and Leopard

This Fall a big trend is pairing red with leopard or cheetah (or so I read) so I decided to go through what I already have and put something together

I left the black shirt and red jeans as the base of the outfit and added in the leopard two different ways

Shirt: Walmart
Jeans: Michael Kors (Ross)
Ankle boots: Ross
Scarf: Gifted
Heels:Guess (Ross)

In the first look I wore the leopard as a scarf.  I bought these adorable new ankle boots so I wanted to try the whole ankle boot with a rolled pant thing. I thought I had rolled them high enough but doesn't look that way in the picture..it might be how I'm standing

And in the second look I wore leopard heels instead.  This also felt like it looked better in person than it photographed.  I was very rushed and I think that is showing through

Which look do you like better?  In person I prefferred the heels look but now in photos I'm liking the scarf more

Low Carb Corned Beef Hash

Corned beef tends to be forgotten about 11 months out of the year....and then is in high demand in March for St. Patty's day.  I'm on a mission to get people to eat it year round.  Not really.....but I do highly suggest it.

There's just something about it that's so delicious.  It's greasy....it's salty....basically everything you love about a french fry but without the carbs, bloat, and guilt afterwards.

You could buy it and just go straight to making the hash but I suggest buying a bunch and cooking it for a dinner with your cabbage fixings one night and using the leftovers to make this delicious hash.  My low carb version uses my usual potato substitute:cauliflower. I promise it's so good you won't mind the sub at all.  

My husband is usually the one who makes this dish but with him working 60 hour work weeks lately I had to fend for myself.  I tried my best to replicate what he does and it came out pretty good.....but his is still better.  Maybe that's because when he makes it I'm usually still laying around in bed watching Netflix.....that could be why. Food usually tastes better that way.

Don't let the use of the dijon mustard in this recipe scare you.  It doesn't scream MUSTARD!!!  It mostly just gives it a nice sort of spiciness...it's delish!


Low Carb Corned Beef Hash

1 lb. Corned beef diced into small cubes
1 small head cauliflower chopped up to similar size of the beef  (looking for equal  ratio of corned beef to cauliflower, just eyeball it if using a larger head)
1 small onion diced
2 cloves of garlic minced
1/2 c. Dijon mustard
2 sprigs of rosemary minced
Salt and Pepper to taste

Begin by browning the corned beef in a cast iron skillet (any pan will do but cast iron is the best)  Allow some of the fat to render off and then scoop out the meat with a slotted spoon and set aside, leaving the fat in the pan.  Add you cauliflower to the pan and allow to cook through.  Try not to stir it too much to let the cauliflower caramelize.  Add your onion and garlic and allow them to soften and slightly caramelize as well.  Stir in the dijon  mustard and rosemary and allow the flavors to cook together for a few minutes.  Season with salt and pepper to taste




Serve as is or with a fried egg on top.  I like mine with a runny yolk.  Not a good picture....I had already started eating

MoMo Monday Week #22

In a previous MoMo Monday post I talked all about how MoMo and I have a morning routine.  She comes into the bathroom and keeps me company.  One of the new things she's started doing is to jump up onto the edge of the shower and stick her head between the inner and outer shower curtains. 

All that would stick out was her little butt and she would get so mad because I would poke her and scare her.  She would give me a "scolding" type meow.  She finally got wise and now she pokes her head out of the curtains instead of her booty.....now she can see me coming
